<p><span class="drop_cap">P</span>reviously, I bought a lot of fruits from Brisbane Market. I bought a whole box of mangoes! Whoa&#8230; so shiok man I tell you. The satisfaction is hard to describe. It&#8217;s like I know each and every of the prettiest girls in high school.</p>
<p>When I was young, I do not have many chances to eat a whole mango by myself. My mum would cut the mango into pieces and share with family. My sister and I would fight for the largest piece of mango (and I win, of course) </p>
<p>Mango is a scarce commodity at my family because it&#8217;s too expensive.</p>
<p>Now.. I own a WHOLE BOX of mangoes!  Remove the skin and and suck the mango flesh by yourself! Fucking satisfying &gt;:D</p>
<p>Today I will show you how I usually eat my OWN-PERSONAL-MANGO. Huhuhuhuhu.</p>

<p>Cut the flesh carefully here ya.. don&#8217;t cut through the mango skin. Cut a line probably one inch deep, depending on how large is your mango.</p>

<p>Hold on both side of the mango, and push out from the middle.</p>

<p>This dish is very simple to make. Actually, any dish is different to make. The difficult part is collecting the ingredients. Especially for a person who do not own a car ^^;</p>
<h3>Here are the ingredients.</h3>

<ul>
<li>Chicken</li>
<li>Oil for deep frying</li>
<li>Salt</li>
<li>Sugar</li>
<li>Worcestershire L&amp;P sauce</li>
<li>Light Soya Sauce</li>
<li>Ginger Juice</li>
<li>Fermented red bean curd (南乳)</li>
<li>Pepper</li>
<li>Corn flour</li>
<li>Plain flour</li>
<li>Coconut milk</li>
</ul>

<h3>Method:</h3>
<p>Combine all marinade ingredients together in a mixing bowl, Add in chicken and mix well. Marinate for at least 3-4 hours, preferably over night in fridge</p>

<p>Heat up oil in a wok, deep-fry chicken pieces until almost cooked. Dish and drain.</p>

<p>Reheat oil and deep-fry chicken pieces until golden brown and crispy</p>

<p>Remove and drain well. Serve with dipping sauce.</p>
<p>Personal note: The chicken smell funny when you marinate with fermented red bean curd. I doubt myself few times when I fry it.. &#8220;wahh.. this thing smell nasty man, who want to taste it after I fry it, any volunteers?&#8221;</p>

<p>Today in Ahbing&#8217;s cooking lesson. I am going to teach you how to cut a chicken. Hah! Sounds syok right? It is! Your mum has probably done this countless times at kitchen, but do you know the correct way to cut a chicken? Do you? DO YOU? I bet the answer is NOOOOOOOOOO. Hahahah! Don&#8217;t worry. I will show teach you how! Offer yourself to help out in kitchen tonight, your mum will be delighted. Tell her &#8220;ahbing sifu taught me one&#8221;</p>
<p>First things first, clean the chicken in running cold water. Then, OPEN THE LEGS. Hehe.</p>

<p>Look for thigh joint &#8211; the red circle. Use your thumb to squeeze and press it down. The joint is opposite the chicken breast side in case you don&#8217;t know -_- The bone is &#8220;snapped&#8221; out from joint. I love to do that I don&#8217;t know why haha. Probably it felt like bending your knuckles until you hear &#8220;krak krak&#8221; sound. I love to do that when I was young, it&#8217;s a bad habit so I stopped doing it.</p>

<p>Flip to the chicken breast side. Pull out the chicken leg until you see the thin skin stretch between leg and body. Cut it.</p>

<p>You will see the bone that we &#8220;snapped&#8221; earlier&#8230; the &#8220;krak krak&#8221; sound, remember? Good. Cut it through..</p>

<p>And you will have a perfect piece of Maryland chicken! (Chicken thigh + drumstick = Maryland). That&#8217;s how Australian call it, not sure about Malaysia. Is it a common name? I don&#8217;t know hahahahha. Maryland is probably the biggest reason why chicken are facing extinctions&#8230; cause it is so fucking delicious.</p>

<p>Now you have a chicken without lower parts! Now we conquer upper parts! The nen gu bao of the chicken!</p>

<p>Slip your knife along the softbone between chicken breast, and cut it along the rib-cage. Easy peasy. One tips to make it easier&#8230; put your thumb on the middle of the breast, push it apart from the softbone. The breast meat will seperate easily from rib cage when you cut it.</p>

<p>Tada! Now you have a perfect piece of chicken breast! Nen gu bao! What else is left? The chicken wings!</p>

<p>Just cut it off along the joints, this don&#8217;t no need teach one. Too easy. Lastly, you only left some uncut chicken bones. Don&#8217;t throw the bone away! Use the bone to cook chicken soup. Throw in a few celery sticks, carrots and onions &#8211; and you have a perfect chicken broth.</p>

			<content:encoded><![CDATA[<p></p><p>Today I will teach you how to make Steamed Spare Ribs with Salted Fish (咸鱼蒸排骨). This is Nonya style cooking, originated from Penang if I am not mistaken. I learn this dish from a recipe book. Borrowed from a friend of mine, Mr.Tsen.</p>
<p>I wanted to try some dishes from that cook book, but I always do not bother to borrow him. Last week, he finally handed over the cookbook to me, &#8220;<em>go back and cook for me</em>&#8221; he said. I accepted his request immediately. He is my dai kor, I cannot say <strong>NO</strong> <span style="text-decoration: line-through;">because he drives Mazda 6 series</span>.</p>
<p>Okay let&#8217;s start.</p>

<h3>Ingredients:</h3>
<ul>
<li>500g spare ribs, cut into serving pieces</li>
<li>50g salted fish</li>
<li>5 shallots</li>
<li>1 tablespoon shredded ginger</li>
<li>3 chili padi</li>
<li>1 red chili</li>
</ul>
<h3>Seasoning:</h3>
<ul>
<li>1½ tablespoon sugar</li>
<li>½ tablespoon pepper</li>
<li>½ tablespoon light soya sauce</li>
<li>½ tablespoon sesame oil</li>
<li>¼ tablespoon salt</li>
</ul>
<h3>Method:</h3>

<p>Cut chili, red onions and ginger into small pieces. Chop spare ribs too. Very easy.</p>

<p>Heat up oil, pan-fry salted fish until fragrant and crispy. Remove. My whole kitchen smell so nice. This is Danau salted fish, personal favourite! I am lucky to find it in the chinese convenient store. My friend drop by and asked &#8220;wahh, what&#8217;s that smell? so goood&#8221; <img src='http://www.ahbing.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Combine all ingredients, seasoning and marinate for 2-3 hours, including the salted fish. To speed up the marinate process, I stomped the ingredients together with a wooden spoon. The ginger and red onion mix so well together. I feel like I can eat it straight.</p>
<p>Steam at high heat for 25-30 minutes or until spare ribs are tender.</p>

<p>Serve hot with rice.</p>

			<content:encoded><![CDATA[<p></p><p>Ahbing&#8217;s kitchen lesson is back! This week I will bring you a lovely and well-known Italian cuisine. PIZZZZZZZA.</p>
<p>I have the opportunity to taste this pizza at one of my friend&#8217;s house party, <em>Joyce</em>. Her sister, <em>Grace</em>, made these awesome pizza and it was delicious! What makes this pizza stands out from the rest of the pizza? The pizza base. We use Tortilla instead of typical Italian pizza base.</p>
<p>Here are some basic ingredients to prepare, no brainers!</p>
<ul>
<li>Burrito Tortilla Wrap</li>
<li>Mozarella cheese</li>
<li>Pizza sauce (I used tomato and BBQ flavour. You can use pasta sauce but it&#8217;ll be a bit sour)</li>
<li>Raw skinned prawns, marinated with mince garlic, olive oil, salt and pepper.</li>
<li>Mushroom</li>
<li>Ham pieces</li>
<li>Pineapple cubes</li>
<li>Basically anything you want to put on pizza, even jelly-beans.</li>
</ul>
<p>Lay the tortilla on a plate, and spread the sauce. <strong>Tips:</strong> usually you put meat first, then proceed to other toppings such as spinach, pineapple or garden salad. Unless you&#8217;re trying to build a tower on the pizza. usually one level of toppings is enough.</p>
<p>The second level is mozzarella cheese. Cover up all the shit underneath! This is the real deal when it comes to good pizza, isn&#8217;t it? FREAKING LOTS OF MOZZARELLA CHEESE!!</p>
<p>Put the pizza into a pre-heated oven 200° Celsius degree (approx. 400 Fahrenheit) for <strong>10 minutes</strong>. Don&#8217;t forget to put a piece of baking paper too. Aluminum foil is not be suitable here because tortilla will stick on it. Anything that has wet ingredient doesn&#8217;t goes well with aluminum.</p>
<p>Behold. The ultimate pizza you&#8217;ll ever taste! This has to be in your &#8220;100 foods to eat before I die&#8221; list.</p>
<p>Eh, please wipe off your saliva from your keyboard. It&#8217;s dripping la.. Hehehehe.</p>
<p>We made eight pizzas tonight. All different toppings! Share among 5 friends and we were happy as hell. I purposely publish this post at midnight&#8230; just so you know&#8230;</p>

<p>Two days ago, I bought 7kg of chicken wings due to popular demand. No, I am not talking about the chicken wings, I am talking about myself <img src='http://www.ahbing.com/wp-includes/images/smilies/icon_cool.gif' alt='8-)' class='wp-smiley' /> </p>

<p>Today I am feeling generous. I decided to share my recipe with readers. Remember, this is one very <em>geng chao</em> recipe. If you wanted to be famous. You have to feed them The Chicken Wing™.</p>
<p>You will need:</p>
<ul>
<li>Sea salt</li>
<li>Ground black pepper</li>
<li>Fish sauce</li>
<li>Oyster sauce</li>
<li>Mince garlic</li>
<li>Ginger paste (optional)</li>
</ul>
<p>And that&#8217;s it! Very easy right?</p>

<p>7 kgs of chicken wings were dissected, prepare to marinate.</p>
<p><strong>Hint#1</strong>: Dissect the wings to make it easier to fry, and makes the portion looks more too!<br />

<p>For best result, marinate it overnight in a refrigerator. Take out chicken wings to room temperature 30 minutes before frying. I sound so <em>pro </em>here hahaha. I&#8217;ve my research online mahh&#8230; I am serious about these shit, yo!<br />

<p>You can cook the chicken wings however you want. Either oven, saute or deep fry. I prefer deep fry cause it&#8217;s much simpler. Boiling and microwaving the chicken wings are not advisable though. If that thought ever cross your mind, I bet you never step into kitchen  <img src='http://www.ahbing.com/wp-includes/images/smilies/icon_evil.gif' alt=':evil:' class='wp-smiley' />  .</p>
<p>If you choose to deep fry, you&#8217;ll need these:</p>
<ul>
<li>1/3 plain flour</li>
<li>1/3 corn flour</li>
<li>1/3 rice flour</li>
</ul>
<p>Mix these flour together and lightly cover the wings. Deep fry it under 180 degree of hot oil. Approx 6-9 mins.<br />

<p>The other day, we decided to buy ourselves pizza from Pizza Capers. Pizza Capers are <em>slightly </em>expensive from Domino Pizza. How <em>slight </em>is the difference? Well, you can buy <strong>three </strong>Domino Pizza for the price of <strong>single </strong>pizza from Pizza Capers.</p>
<p>RM56 for a slice of pizza. Amen. I have to eat paper for the rest of the week. Hehe.</p>

<p>What&#8217;s so special about Pizza Capers? Why are they so expensive? Well, Pizza Capers are not really that expensive to be honest. Only that Domino pizza are <strong>dirt cheap</strong> <img src='http://www.ahbing.com/wp-includes/images/smilies/icon_razz.gif' alt=':P' class='wp-smiley' />  Two pizzas are from different &#8220;league&#8221;, cannot compare one. Pizza Capers are much better than Dominos in terms of ingredients, freshness, deliciousness. And they are <span style="text-decoration: underline;">Gourmet Pizza Cafe</span>. You get what you pay.</p>

<p>We get good words of mouth review from friends around. We always wanted to try it but it&#8217;s way too expensive. Now we&#8217;ve actually try it. To be honest, I love it! But I don&#8217;t see myself buying Pizza Capers in coming future due to it&#8217;s pricing. For a student who doesn&#8217;t has income like me, supporting Pizza Capers means speeding my way back to Malaysia  <img src='http://www.ahbing.com/wp-includes/images/smilies/icon_cry.gif' alt=':cry:' class='wp-smiley' /> </p>
<p>Thinking of saving money, I bought one piece of the pizza and decided to split it into two meals.</p>

<p>Today, ahbing will teach you how to cook a weird named chicken recipe.. Savadorian Chicken. Weird name but tasty ones <img src='http://www.ahbing.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Ingredients are:</p>
<ul>
<li>1 big chicken</li>
<li>1 onion</li>
<li>2 red pepper</li>
<li>2 jalapeno</li>
<li>2 roma tomatoes</li>
<li>2 cloves garlic</li>
<li>1 tsp oregano</li>
<li>1 bay leaf</li>
<li>cayenne</li>
<li>2 cups chicken broth</li>
<li>2 cups water</li>
<li>1 cup sour cream</li>
<li>salt and black pepper</li>
<li>fresh chopped cilantro</li>
</ul>
<p>First, put the damn chicken into big pot, and pour in water, chicken broth and sour cream. Er, wait, I think you have to throw in everything&#8230;</p>

<p>Yeeeehaaaaaaaaaaaaaaa!! Throw in everything!!!!! throw throw throw!!!! You don&#8217;t have to wait until the water is boil. You can put in everything even if you haven&#8217;t turn on the fire.</p>

<p>Medium heat fire, cover and simmer for 30-45mins, turn the chicken around, and continue cook for another 30 minutes. Until the chicken&#8217;s skin obviously become very soft and tender.</p>

<p>Use your hand to turn the chicken if you dare. I dare you.</p>

<p>When both side of the chicken is fully cooked. Take out the chicken and put onto a chopping board. Seperate the chickene from bones and chop it into smaller pieces.</p>

<p>Before putting the chicken meat back into the pot. Make sure you scoop out and discard the extra chicken fats. Only consume it if you want to die early.</p>
<p>Cook for another 2-3 hours until the meat totally lost it&#8217;s texture. Pour it onto rice, egg noodle, or simply just eat it that way (we uni students always do that).</p>

<p>Wassup people. Ahbing is back with another cooking lesson. Today, Ahbing is going to teach you how to cook seafood spaghetti, also usually known as <em>Marinara Spaghetti </em>in restaurant.</p>
<p>Here are the ingredients (serves 3):</p>
<ol>
<li>300g spaghetti</li>
<li>125ml dry white wine</li>
<li>300g fish</li>
<li>300g prawns, peeled</li>
<li>300g mussels</li>
<li>3 garlic cloves</li>
<li>1 onion</li>
<li>400g Roma tomatos</li>
<li>3 tablespoon tomato paste</li>
<li>fresh parsley</li>
<li>salt and pepper to taste</li>
<li>olive oil</li>
</ol>
<p>First, heat up a few tablespoon of olive oil, then put in onion, cook in low heat for 3 minutes.</p>

<p>Then leh, add minced garlic, tomato paste, tomato and dry white wine, cook another 3 minutes.</p>

<p>I am going to teach you one old trick &#8211; how to cook spaghetti evenly.</p>
<p>When the water is boiled, hold the spaghetti in middle of the pot. Twist it clockwise (assume you&#8217;re left handed) as fast as possible while bottom of the spaghetti remain contact with the pot. The spaghetti will spread out like flower. I call this skill &#8220;chiu kap mou dek duk dong yat min mou yan gam xiu hao lan geng zi zue min fat&#8221;</p>

<p>Ok, few minutes later.. tomato starts to soften and become a bit wet (tomato juice ma). Put in fish and prawns, cook another 3 minutes.</p>

<p>Put in the last ingredient&#8230; mussels! Don&#8217;t forget to add salt and pepper also ya. Cook another 5 minutes until all mussles &#8220;open mouth&#8221;. Discard the mussles which didn&#8217;t open up.</p>
<p>By this time, you&#8217;ll probably smell the delicious aroma from mussles.</p>
<p>Mix with spaghetti and sprinkle some fresh parsley on top.</p>
