Ahbing teaches you how to cook: Marsala Chicken

Today, ahbing teach you how to cook Marsala Chicken.

Marsala is a dark sweet dessert wine made in Sicily. Contains 13% alcohol if not mistaken. But when you cook, the alcohol “evaporates”.. you won’t get drunk when you eat this dish. Don’t get any evil ideas! Invite girls over your place then you cook this dish to intoxicate her. It doesn’t work this way ;)

Here are the ingredients you need:

  • Chicken Breast
  • Butter
  • Mushrooms
  • Chicken broth
  • Marsala wine
  • Salt and Pepper
  • Oregano leaves
  • Flour

Because I am a lousy teacher, I am lazy to write details of amount of measures you’ll need. Use your feel la hahhahaha.

Okay let’s start shall we?

Cut chicken breast into fillets, season it with salt and pepper. Saute the chicken breast in low fire for 5 minutes. Use butter instead of cooking oil. Flip to other side and saute another 3 minutes.

Hopefully you’ll know when to flip.. and don’t overcook it. Or else you’ll be chewing a piece of rock instead of tender juicy chicken breast.

Remove the chicken when both sides are light brown.

Next, put more butter into the pan, and add lots of mushrooms. Goreng goreng goreng ah!! Remember to put more butter because mushroom absorbs gao-gao one. Then, add some Marsala wine. The amount of wine will determine the sweetness of the dish. Make sure don’t pour too much if it’s too sweet.

Add a spoon of plain flour to make the sauce “sticky sticky” :P

Then, add chicken broth. You can substitute chicken broth with chicken powder + water if you run out of chicken broth. You’ll probably get a watery sauce again at this stage. Cook for another 3-5mins until the sauce become sticky sticky again.

When the sauce become sticky jor, add the chicken breasts into the pan and goreng them together. Cook for another 1-2 minutes, let the chicken absorbs the marsala sauce gao gao.

There you go, I present to you.. Marsala Chicken!!

P/S: This dish is dedicated to shashasha. She came Brisbane and wanted to try my cookings. Too bad we were both busy and didn’t have the chance to come over my house. I was suppose to cook this dish for her. Nah Sha… you cook yourself at home la. hahaha.

Malaysia can get this Marsala??

Yes I think you can get it. In fact, it’s much easier to get it in Malaysia, as long as you ask the right person ;) I believe they sell it in supermarket. Unlike in Australia, only can get it at liquor store.
